Still technically only one katana. It is by definition a long sword and the short one that's traditionally paired with it is a different kind of sword, typically a wakizashi. Although the daisho can technically consist of any daito (long Japanese sword) and any shoto (short Japanese sword).

That being said, 刀 (katana, dao, to, chi, et cetera) is just a word for a blade with one edge. Any single edged japanese sword (which is almost all of them, post-Heian) could be described with it. The 'to' in shoto is the same character.
My samurai history is a bit vague, but if I recall correctly the use of 刀 on its own to describe a particular design of sword that was common in the latter half of the last millennium is a fairly recent thing, in the broader scope of Japanese history.
